L-Ascorbic acid sodium salt is used as an antioxidant, an acidity regulator and an antimicrobial in food stuffs. As a reductant, it is involved in the isolation of chloroplasts. It acts as a coenzyme for many hydroxylation reactions. It plays a vital role to eliminate chronic and acute infections. It finds applications as an additive in curing meat products such as ham and sausage meat. It is widely used as a nutritional supplement in agriculture and animal feed to promote the growth of young animals and prevent scurvy.
