It finds application in the determination of protein molecular weight by polyacrylamide gel electrophoresis and in the analysis of hemoglobin. In food products, it is used as an emulsifying agent and a whipping aid. It is widely found in toothpastes, shampoos, shaving creams and bubble bath formulations due to its thickening effect and ability to create a lather.
